Eggplant Amount of each depends on number of mouths you are feeding
Zucchini
Bell pepper
Chicken
Hoisen sauce (available in Asian food section at grocery store)
Instructions:
Light the grill. Cut veggies into quarter inch thick slices and then halve them. Chop chicken into cubes. Lace skewers with veggies and chicken-make them veggie heavy. Brush hoisen sauce over skewers and grill until done. Serve with fruit bowl or watermelon.
Easier Option
I think skewers can be a pain. Grill the chicken glazed with hoisen sauce. Chop veggies, toss with hoisen sauce and put them in a grill safe pan. After chicken is cooked you can cube it.
Even Easier Option
Cut everything and put it in a skillet pan and stir fry it in hoisen sauce. You will need to add water and go light on the heat.
