Serves 4
¼ cup brown sugar
¼ cup low sodium soy sauce
1 Tb lime juice
½ tsp crushed red pepper
¼ tsp curry powder
3 garlic cloves
8 boneless, skinless, chicken thighs, remove fat
White jasmine rice
Marinade: Put first 7 ingredients in a large zip lock bag and refrigerate for 4 hours upto overnight.
Instructions:
Cook chicken on the grill. Cook the rice according to package instructions. Serve chicken over rice and add an easy vegetable like a salad or check out Broiled Asparagus- under Vegetable Side Dishes.
