Pumpkin Streusel Bread
This bread tastes amazing! You have to try it!
Topping:
¼ cup chopped pecans
2 Tbs sugar
1 ½ Tbs chilled butter cut into tiny pieces
¼ tsp cinnamon
Bread:
1 cup all-purpose flour
1 cup whole wheat flour
½ cup sugar
½ cup raisins
1 tsp baking soda
1 tsp salt
½ tsp cinnamon
½ tsp cloves
½ tsp nutmeg
1 cup canned 100% pumpkin
½ cup plain low-fat yogurt
½ cup honey
¼ cup vegetable oil
1 tsp vanilla extract
2 eggs
Instructions:
- Prepare topping by tossing ingredients and set aside.
- Preheat oven to 350 degrees.
- Combine flour through nutmeg in a large bowl and stir with a whisk.
- In another bowl combine pumpkin through eggs.
- Make a well in the center of the flour mixture and pour the wet mixture in.
- Stir until just moist and pour batter into a 9 x 5 loaf pan.
- Sprinkle topping over the top and bake for 1 hour.
This recipe is easy but if you are really not into baking Krustez makes a good tasting pumpkin bread box mix. Baking from scratch is a healthier way to go, but the Krustez box mix is not too bad for processed food.
